Festive Bite-Sized Treats: How to Transform Christmas Leftovers into New Year’s Eve Canapes

Party snacks doesn't have to be elaborate, so New Year's offers a great opportunity to use up what's left. The main guideline is to stick to items to just one bite—no one wants to manoeuvre a fork. Guests are looking for a comforting taste of comfort food with a decadent twist.
If you have a bit of smoked salmon left, place it on blinis and top it with affordable roe. Mini fishcakes are also an ideal choice: If you have leftover smoked haddock or hot smoked salmon, fold it through mashed potato, blend with dill, citrus, and fried leeks, then roll in panko and fry until golden.
You could also have a ball with Spanish croquettes. Make the bechamel up to days ahead, then use remaining pork, poultry, or mushrooms for the filling. Blitz stale bread into breadcrumbs to cover them, then fry. Sausage roll fillings are another natural home for those breadcrumbs, or use them as a coating for chicken pieces. For flavour, just add a bit of lemon zest and aromatic herbs, and they'll taste so much more. As an aside, buttery pastries make superb coatings, too.
One favourite thing at this time of year is a post-holiday sandwich, and that doesn't have to stop after Boxing Day. Place some ham and turkey in an airtight container and store in the freezer. While you're at it, reserve some berry relish and honey ham glaze in the fridge. When needed, thaw the meat, then place it in a preheated oven with the saved glaze for a short time. Let it cool and slice thinly, then lay on top of some sourdough and start building mini sandwiches with lots of tangy sauce. Cut into small squares for a winner.
Leftover turkey, meanwhile, could be transformed into a zingy salad. You often have a bit of turkey leg left over, and it's ideal for something punchy. Shred the meat, then crisp it slowly in a pan, and toss with remaining sauce loosened with citrus juice, a spoonful of soy and a little spicy oil. Finish with chopped herbs and some green onions, and serve in small lettuce cups.
Revamping Leftover Vegetables
Vegetables, meanwhile, can be scrubbed up and ready to party with a big batch of fried potato cake. Combine all your leftover veg with fresh herbs, then season and incorporate a binding agent. Stamp out portions to about the size of small rounds, then keep in the icebox. Refresh in a hot oven for a short time and finish with whatever you like—perhaps roast beef and sharp horseradish. A word to the wise, though: set some aside for brunch the next day.
